It is a must for every line of bakery or pastry.
Removes impurities black and white flour and avoids involvement of foreign bodies into flour. Flour aerated by sifting it.. Aerate the flour results: favoring oxidation reactions in flour, ""flour whitening"" which determines a final product with a lighter core.
Integrating oxygen leads to accelerate the propagation of yeast in the dough and also increase the amount of CO2 result.
